	Peanut butter popcorn

½ cup (120 ml) honey
½ cup (106 g) granulated sugar
½ cup (131 g) peanut butter
½ teaspoon pure vanilla extract
1 teaspoon table salt (optional)
8 cups prepared popcorn
Directions
- Preheat the oven to 150°F (65°C). Line a baking sheet with parchment paper and set aside.
 - In a medium saucepan over medium heat, combine the honey and sugar and cook until the sugar is melted, and the mixture comes to a boil. Boil for 1 minute.
 - Remove from the heat and quickly add the peanut butter, the vanilla extract, and the salt, if using. Stir well.
 - Place the popcorn in a large mixing bowl and pour the contents of the saucepan over the popcorn. Stir well until all the popcorn is coated with the peanut butter mixture.
 - Transfer the contents of the bowl to the prepared baking sheet in a single layer. Bake for 1 hour, stirring every 15 minutes. Remove from the oven.
 - Serve immediately or store in an airtight container at room temperature for up to 4 days. It usually doesn’t last that long.
