	Breakfast Biscuits

servingsI love to go out for breakfast—or even just to pick up a fast-food breakfast sandwich. But living in Switzerland, there aren’t many places that offer breakfast sandwiches, so I decided to make my own. I’ve made these for others as well, and they’ve often told me how much they enjoy them.
Ingredients
- For the biscuits
 2 cups (254 g) all-purpose flour
½ cup (108 g) vegetable shortening or unsalted butter
1 tablespoon baking powder
1 tablespoon granulated sugar
1 teaspoon table salt
¾ cup (175 ml) milk
- For the sandwiches
 12 fried eggs
12 slices cooked bacon or other meat of your choice
12 slices cheese of your choice
Directions
- Preheat the oven to 450°F (230°C). Set aside an ungreased baking sheet.
 - Using a pastry cutter or the tines of a fork, blend together the flour, shortening, baking powder, sugar, and salt until the mixture resembles fine crumbs. Stir in the milk until the dough lifts from the sides of the bowl (the dough will be soft and sticky).
 - Dust your hands and a clean, flat work surface with a light coating of flour. Turn out the dough onto the work surface and knead it lightly. Roll out the dough to a ½-inch (1.3-cm) thickness. Using a floured 2½-inch (6.35-cm) round cutter (or drinking glass), cut the dough into circles and place them on the prepared baking sheet; if you wish the sides of the biscuits to be crusty, place them 1-inch (2.5-cm) apart; if you wish the sides to be soft, place them next to each other.
 - Bake for 10 to 12 minutes, or until golden brown. Remove from the oven and set aside to cool slightly.
 - Slice each biscuit in half horizontally. Top each lower half of the biscuits with 1 egg, 1 slice bacon, and 1 slice cheese each. Place the biscuit tops on each and serve immediately.
